Easy Andes Mint Chocolate Brownies Recipe
1 box brownie mix
4 tablespoons unsalted softened butter
1 cup powdered sugar
1 1/2 tablespoons heavy whipping cream
1/2 teaspoon Peppermint extract
6 oz. semi sweet chocolate chips
1 bag Andes mints
Prepare brownies according to box in an 8×8 pan, or make a batch from scratch.
Once brownies have cooled, mix together 2 tablespoons unsalted softened butter, powdered sugar, heavy whipping cream and peppermint extract. Add green food coloring until you have your desired color. Spread over cooled brownies and place in refrigerator for about 10 minutes.
In a microwave safe bowl place semi sweet chocolate chips and 2 tablespoons unsalted butter. Microwave on high in 1 minute increments, stirring after each minute, until smooth. Spread chocolate mix over mint layer.
Chop Andes Mints and sprinkle over top of brownies. Place in the refrigerator for 30 minutes to set.
