I love Mandarin oranges and limes, so naturally a MANDARIN + LIME JAM is something that makes my heart sing! This yummy jelly marmalade would be perfect on toast, sandwiches, crackers and more at your next celebration, party or family meal!
Mandarin Lime Jelly Marmalade Jam Recipe
6 mandarin oranges
1 -2 large lemons
5 cups water
7-8 cups sugar
Peel your mandarin oranges and lime, keeping the mandarin peelings, but removing as much of the white membrane as possible. Remove seeds from the lime and oranges, if any.
Chop mandarin peelings.
Place mandarine oranges, lime, and mandarine peelings in a large saucepan and add 5 cups water. Bring to a boil, then reduce heat and simmer, covered, for about 40 minutes (until peelings look transparent).
Take off heat and add sugar and stir. Return saucepan to heat and continue to stir (watch the heat, you don’t want it to boil at this point). Taste test, and add more sugar if desired. More lime juice can be added, as well.
Boil again, this time uncovered, stirring occasionally. Boil for about 1/2 hour or until at a good jam consistency.
Pour jam mixture into small jam jars and seal while warm.
Yields 3 small jars of jam.
