Summer is on the horizon! Whether you are planning an evening bbq party, constantly on-the-go, sunbathing or hanging out with friends and family – this delicious, fresh summer detox salad recipe from Robyn Youkilis – food and wellness coach and host of Veria Living TV network’s Veria Living Live (weekdays at 1pm EST) — will ensure you and your guests are looking and feeling your best all summer long!

Summer Detox Salad Recipe

Ingredients:

1 bunch of fresh kale, cleaned and chopped {THE KALE WILL HOLD UP IN THE HEAT
Handful of chopped dandelion greens
Sprouts (any kind will work)
Raw pumpkin seeds
1 avocado, sliced
1 grapefruit {REFRESHING ON A SUMMER DAY}
¼ cup olive oil
2 tablespoons raw apple cider vinegar
1 teaspoon of honey, preferably raw
Sea salt
Fresh ground black pepper

Directions:

1. Supreme your grapefruit – remove skin and cut out grapefruit segments.  Save membrane and peels to squeeze juice for dressing.

2. Begin building your salad – layer spinach, dandelion greens and sprouts.  Add grapefruit segments and avocado slices.

3. Drizzle salad dressing over salad and finish by sprinkling pumpkin seeds.  Feel free to add a piece of fish, veggie burger or chicken on top for a complete meal.

To make salad dressing:

1. Squeeze grapefruit membrane and peels into a bowl.
2. Add in honey and whisk.
3. Drizzle olive oil and whisk all ingredients together.
4. Season with salt and pepper.

Serves 4-6
