Coconut Milk Cupcakes with Toasted Coconut Frosting Recipe
1 cup unsalted butter, softened
2 cups sugar
1 cup coconut milk
3 cups cake flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon coconut extract
1/2 teaspoon pure vanilla extract
1 tablespoon coconut extract
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 cups powdered sugar
Shredded, sweetened coconut
Coconut flakes, toasted
Directions for cupcakes:
Preheat oven to 350°. Line standard cupcake tin with cupcake liners.
In a large bowl mix together butter and sugar until fluffy (for about 3 minutes). Mix in eggs until batter is well combined.
Sift together flour, baking powder, and salt. Add flour mixture to butter mixture and stir. Add coconut milk and mix until all the ingredients are well incorporated. Stir in coconut extract and vanilla extract.
Pour batter into cupcake liners, filling them about two-thirds full. Bake for 25 minutes or until until light golden brown and a fork or toothpick comes out clean. Remove cupcakes from pan and allow them to cool before frosting.
Directions for the frosting:
Mix together cream cheese, butter, sugar, and coconut extract and taste. If desired, add more coconut extract. Pipe or spread coconut frosting onto cupcakes. Top each cupcake with toasted coconut flakes and serve!
