Amazing and easy appetizer!  Cucumber cream cheese tomato bites! Recipe via Kara's Party Ideas | #cucumberbites #appetizer

These amazing CUCUMBER TOMATO BITES are the perfect appetizer! Serve them at your next baby shower, holiday party, brunch, lunch party, birthday party, dinner party or Christmas celebration! Perfect for a BBQ, too! 


3 cleaned and peeled cucumbers
12 cherry tomatoes, sliced in half
8-ounces softened cream cheese
1 tablespoon mayonnaise
1 tablespoon chopped green onions
4 teaspoons Ranch seasoning mix
Fresh herbs for garnish (optional)
Salt and pepper (if desired)

In a bowl or your food processor, mix cream cheese, mayo, green onions and ranch seasoning until smooth. Add salt and pepper until desired taste is reached if you would like.
Slice cucumbers into 1 inch segments like shown in photo.
Transfer the cream cheese mixture into a pastry bag with desired star tip.
Pipe filling onto each cucumber and garnish with fresh herbs.
Chill for at least 30 minutes before serving.

Yields 24 cucumber bites

    Hi! Just made these for a Thanksgiving appetizer! They look and taste great!! I didn’t have cherry tomatoes, so I used a red bell pepper instead. One problem I ran into was that the cream cheese mixture wouldn’t stick to the cucumber, so it might be helpful to dry them a little with a paper towel before the mixture goes on. But otherwise all is great! Thank you for a tasty and easy recipe!!! :-)

    This was a hit @my daughter in law Sprinkle Brunch. Both the adults and kids could get enough . I added herbs the provance and lemon juice .it gave it a little kick .

    I made these and they turned out terrific! The only change I made was that I slightly hollowed out the cucumber slice to give the cream cheese a ‘bowl’ shape to sit in. Someone asked about preparing the day before: I would prepare the cream cheese mixture ahead of time, and prepare cukes, but wait and assemble the day of the party. If left together overnight, the cheese has a tendency to ‘draw out’ moisture from cuke and gets a little runny.
